Tasty sandwich substitutes
Packed lunches don't always have to mean the same old sandwiches. Switch it up for the new year with some tasty substitutes. And remember that you can add in little snack pots of bright vivid fruit like blueberries, raspberries, orange segments and grapes that won't brown.
Load up some delicious tortilla wraps with salad and chicken (or fish or beans) as a colourful alternative to their usual sandwich. This Mexican chicken and avocado salad recipe can be stored in a small Tupperware and then piled onto a tortilla at lunchtime to keep them really fresh. Just take out the chilli for those who don't like it too hot!
Or liven up their lunchbox with some delicious-looking mini quiches. Start with a basic Quiche Lorraine recipe and then get creative. You can remove the ham for veggies and switch the Cheddar for blue cheese or Emmenthal.
Again, you can make these in advance and pop them into their lunchbox in the morning.
