Delicious bakes to whip up this Easter

Ah, Easter. A chance to spend a long weekend with friends and family, relaxing, eating and drinking. Mark the occasion with a spectacular bake, and invite your nearest and dearest to come and tuck in over a cup of tea. We've rounded up a few of our favourite recipes from GBBO's Briony Williams – from the simple to the truly spectacular.

Briony Williams says, "For me, Easter is about getting together with family. As a child, there was nothing more exciting than going into the living room and seeing the chocolate eggs pile up high. Now, every Easter Sunday, we go to my mum's and organise an egg hunt for the kids. They love it so much, they don't even eat the eggs; they make us put them back out so they can find them all over again!"

Briony's rainbow cake 

Possibly the ultimate celebration cake, this winning recipe works for any celebration – birthdays, summer parties, baby showers… and Easter, of course! Topped with stripy meringues, this beauty is guaranteed to impress.

How pretty is this cherry-adorned arctic roll? Perfect for bringing out after a barbeque (weather allowing…) or an Easter roast, it's easier to assemble than you'd think – and generously serves 14. The ultimate dessert to herald the end of winter!

Mixing a crunchy 'carrot cake' base, thick orange curd and sweet cream cheese, this irresistible cheesecake needs to be baked for around 50 minutes, and chilled in the fridge before guests can tuck in – we promise, it's worth the wait!
