5 tasty dinners for one

When you're only cooking for yourself, sometimes it's hard to know what to make. Spending hours in the kitchen preparing dinner is just not as appealing.

Fear not! There is no need to compromise on taste when it comes to speedy cooking. From stir-fry to sweet potatoes, we've got dishes that require minimal effort but still have maximum flavour. Exactly what's needed when making dinner for one.

Salmon parcels

This salmon dish is super speedy and packed with flavour - all you have to do is wrap up the seasoned salmon and vegetables in silver foil and pop it in the oven for 20 - 25 minutes. With little prep required, this is just the dish for when you want to just nip in and out of the kitchen but still tuck into a yummy dinner.

chicken and tomato courgetti

Ready-cooked chicken is the secret to making this low-fat pasta bowl in a matter of minutes. Spiralise the courgette, assemble the rest of the ingredients and microwave so the chicken is piping hot. All that's left to do is tuck in and enjoy!

Mexican-style sweet potatoes

Spice up your dinner with these Mexican-style sweet potatoes. A proper winter warmer, the tomato salsa makes a deliciously fresh topping that you can prepare speedily while the potatoes are cooking. Once the potatoes are cooked spoon out the salsa and dive.

mushroom and spring onion noodle soup

A bung-it-all-in recipe, this noodle soup is full of goodness and just takes 20 minutes to cook. With a soy sauce and vegetable stock forming the basis of this hearty broth, ginger and crunchy vegetables including mangetout and sweetcorn complement the mushrooms and add texture and flavour.

black pepper beef stir fry

This recipe from Michelin-starred chef Tom Kerridge is a healthier take on stir-fry. As if that doesn't already sound appetising enough, it is made with lean steak and lots of vegetables so this dish cooks quickly and will be ready in a flash.
