Cauliflower has had something of a renaissance these last few years. Although it has been used in Indian curries and European soups for centuries, here in the UK many of us are most familiar with it as an unseasoned, steamed additon to a Sunday roast – or entirely disguised with a thick cheese sauce (not that we're knocking it).
Why that should be, we just don't know, as cauliflower is a delicious, versatile vegetable. Why boil it when you can grill, roast or mash it?

Cauliflower cheese meets fish pie in this super-easy recipe. No potato-mashing means less time in front of the stove – and with only a handful of ingredients you could knock this one up on a weekday.
Slow cooked beef ragu with cauliflower mash and peas
Cauliflower mash is a great low-carb alternative to the classic spud version – but it's also super tasty, and makes an indulgent side when seasoned with butter or oil, plus salt and pepper. Serve it as a topping on pies, or alongside sausages and stews.
Spicy cauliflower steaks with lemon
These cauliflower steaks are packed with flavour thanks to a tasty ras el hanout, yogurt and lemon marinade. When the weather allows, crack out the barbecue and grill up a platter of these to serve with salad and dip.
Tenderstem broccoli & cauliflower gratin
