Native to Mexico and Central America, the avocado is tasty, extremely versatile, and high in fibre and vitamin E. Avocado ranch dressing (V)
Stone, peel and chop a ripe avocado. Use a handheld blender to purée with a splash of cider vinegar, a dollop each of Asda Soured Cream and mayo and a pinch of garlic powder. Stir in a little chopped parsley and chives. Mix in enough milk for a thick dressing.
Avocado, cheese & onion chutney quesadilla (V)
Halve, stone, peel and cube an avocado. Mix with some crumbled Lancashire cheese, finely chopped green chilli and chopped pointed red pepper. Spread a tortilla with onion chutney. Top with the avocado mixture and cover with another tortilla. Cook in a pan over a medium heat for 2-3 mins. Flip and cook on the other side. Serve with salad and salsa.
Chipotle guacamole loaded skins (V)
Bake some large baking potatoes at 200C/180C Fan/Gas 6 for 1 hr. Mash a few avocados with a dash of lime juice. Stir in some tomato, deseeded and chopped, red onion, chopped, a chilli, deseeded, coriander, chopped, and a few drops of Tabasco. Halve the baked potatoes, scoop out the flesh, mash and combine with the avocado. Divide between the potato shells and return to the oven for 10 mins. Garnish with coriander leaves, if you like.
