Sweet potatoes are enjoyed all over the world, in various forms – a popular American Thanksgiving dish combines them with marshmallows, sugar, butter and cinnamon; in Egypt they are mostly eaten as a dessert, baked and topped with honey; in the UK we probably know them better as a savoury side dish, in french-fried form, mashed, or roasted. Sweet potato curry
Whether or not you're vegetarian, this is one tasty curry, and you certainly won't notice the absence of meat. You can change things up depending on what you have in the fridge – a jar of Tikka Masala or Korma paste would work just as well as Balti. Coconut milk adds creaminess, while toasted flaked almonds bring a little sweetness and crunch to this dish. Simply serve with piping-hot basmati rice.

As if regular potato gratin wasn't delicious enough, this sweet potato version came along and opened our eyes to new levels of carby bliss. Soft, buttery leeks and a sprinkling of paprika add flavour, and the (already creamy) potatoes are made even more indulgent with a splash of cream. Delicious with a simple piece of chicken, fish or gammon, this would be just as tasty served alongside salad for non-meat eaters.
Sweet potato pancakes wth dhal
Fluffy sweet potato pancakes are topped with spicy lentil dhal and creamy yoghurt raita, in yet another cracking veggie meal. Sprinkled with fresh coriander, this dish is low in fat, sugar and salt, with a good healthy mix of fibre and protein (plus a good pinch of the ingredient of the moment, turmeric).
Sweet potato & ginger cake
If you can put beetroot or courgette in cake, you can sure as heck throw in some sweet potato. In the case of this recipe, you need to bake the potatoes for an hour before scooping out and mashing the flesh with a fork. Light brown sugar is added for extra sweetness, as well as stem, ground and crystallised ginger. Who could resist a warm slice of this with a cup of tea? Not us.
