We chatted to three celebrity chefs about the delicious dishes that remind them of their summer holidays, from Middle Eastern moussaka to flavour-packed paella...

Celeb chefs The Hairy Bikers say: ‘There are so many dishes that remind us of sunny times but a good paella is our favourite. It brings back memories of our days in southern Spain, sampling spicy delights, and we love to recreate those delicious meals at home. Paella is a great crowd-pleaser – just plonk the pot on the table for everyone to help themselves. The best!’

The chef and Insta-star (@isaaccarew) says: ‘Cooking with seafood evokes sunshine, salty air and great food, so this prawn burger was an instant holiday hit when I served it at a party for friends last summer. With the sweet brioche bun, zingy mayo and herby prawn patty, it’s a fresh take on the usual barbecue burger – and you won’t be able to get enough of it.’

The Instagram chef (@melizcooks) says: ‘Growing up in a big Turkish Cypriot family meant summers were about mezes served with grilled meats and seafood. This beautiful vegetarian moussaka was – and still is – a firm favourite, as the layered sliced vegetables soak up all the delicious flavours of the lentil and mushroom ragu. It can be prepared in advance and is perfect for eating al fresco.’
