How to throw a best of British-themed picnic

Missing the tennis? Embrace the spirit of the season with our ultra-summery recipes

How to throw a best of British-themed picnic

There may not be any tennis on this year, but that sure as heck won't stop us from sharing a jug of Pimm's or a big bowl of strawberries and cream al fresco!

In fact, we're going the whole hog with a best of British-themed picnic, boasting all those classic treats – from sausage rolls and scotch eggs to Eton mess and gin fizz.

Care to join us? Read on, for the seven recipes no great picnic would be complete without…

Pimm's cupcakes

Pimm's AND cupcakes, rolled into one? Sounds like a winning recipe to us… After icing, top each cupcake with a small strawberry, mint sprig and sliver of cucumber, for perfectly pretty treats.

chessboard sandwiches

Little crustless sandwiches filled with cream cheese and cucumber, and egg mayonnaise – how can you go wrong? Inspired by Alice's Adventures in Wonderland, these chessboard sandwiches have been topped with hearts, diamonds, clubs and spades, carefully cut from red pepper and olives. Clever!

strawberry, feta and pine nut salad

Strawberries and tennis may be a match made in heaven, but they work well with salty feta and peppery rocket, too. That's why we've given them a Mediterranean spin in this summery salad. Finish it off with a generous scattering of toasted pine nuts and a drizzle of thick, syrupy balsamic dressing.

Elderflower gin fizz

Didn't think a classic G&T could get any better? Neither did we, until we tried this refreshing mix of gin, apple juice, cucumber, lime juice, soda water and elderflower cordial. Serve in a tall glass, with plenty of ice and a cucumber garnish. Trust us, it's a winner!

Scotch eggs with pimm's ketchup

As if Scotch eggs aren't British enough as it is, we've gone and served them with ketchup flavoured with Pimm's – a picnic essential! Our recipe makes a delicious dozen, which is just as well as these won't hang around for long…

eton mess with a twist

Thick whipped cream, rippled through with a strawberry and elderflower purée and crushed meringue – this is one dreamy dessert. It is deceptively quick and easy to prepare – serve in glasses, or decant into jars with lids for a portable, picnic-ready treat.

Picnic sausage rolls

You can't have a picnic without sausage rolls, are we right? Our recipe couldn't be simpler, as it uses ready-made puff pastry – plus, it makes a generous batch of 16 snack-sized rolls.
