With the lighter mornings and what seems like - dare we say it -  warmer evenings, we'd like to think that spring is on its way.

We’ve rounded up some tasty meals which are simple to cook but don't skimp on flavour

Mediterranean leftover vegetable frittata

Not only is this one-pan wonder simple and tasty, but you can use any leftover veg you have in the fridge to bulk it out - think broccoli, spinach, carrot, sweetcorn, leek - whatever you like! So if you haven’t managed to pop to the shops in the midst of your busy schedule, don’t fret as you can adapt the ingredients to suit you. 

Speedy squash and spinach curry

Ultra-quick if you need to eat now, but a fast make-ahead dish, too. The spicy flavours develop so it tastes even better the next day. You can serve this with a naan bread, rice or even cauliflower rice if you're feeling adventurous.

Speedy chicken and leek casserole

Casseroles don’t have to be heavy on the stomach! This light chicken and leek concoction is ready in 30 minutes and there's bound to be leftovers for lunch tomorrow. Perfect!

Lemon and thyme roast chicken

Ah, a simple, classic roast with a citrus twist is perfect for spring and ideal for feeding hungry tummies. Serve with some delicious spring new potatoes and veggies.

Or if you’ve got any vegetarians in your family, forget the chorizo and you could add another meat substitute like Quorn or tofu.
