Social media’s latest foodie craze, magic cake recipes are flooding Pinterest and Instagram thanks to the brilliant way they make baking triple-layer cakes so easy.
No need for three separate cake tins full of different mixtures, and no need for painstakingly delicate assembly, either.
With the magic cake, everything is simplified; you’ll need one mixing bowl, and just one baking tray.
But while it seems like the stuff of fairytales and kitchen wizardry, the magic actually lies in the scientific properties of what master bakers call ‘loose batter’.
Here’s how it works.
Using typical ingredients such as eggs, flour, sugar, butter and milk (you can even use pre-bought cake mix), the cake batter is mixed up in a bowl and poured into the baking tray. So far, so simple, right?
But what we don’t see is that the ingredients in any magic cake recipe will actually be divided into three different ‘weight classes’, which make the different layers.
The heaviest ingredients, for example, will form a dense cakey base, the ‘middleweight’ ingredients will create a soft, squidgy center, while the whipped-up lighter ingredients will form a spongy top.
