It’s that time of year again when we just can’t help but indulge in one too many mince pies, and nothing really says it's Christmas until we've been left groaning about how full we are on the sofa. 

But what is it that really makes these little morsels so delicious? Maybe it's the sweet taste, the heavenly smell and let's not forget the buttery pastry which just melts in your mouth - whatever it is we just can't seem to get enough!

This year, why not mix things up with an original twist on this old classic and flavour your pastry?

From cinnamon and nutmeg, to ground almond, cocoa and orange zest, simply substitute a little of the flour for additional dry ingredients or gently knead into a shop-bought pastry.  

Using this basic pastry recipe, you can create a showstopping mince pie with different flavours and textures in no time. Once you get the pastry right, your mince pies will be the best you've ever tasted!

Go nuts

Swap 70g plain flour for 70g ground almonds or hazelnuts. Not only will it give it a nutty flavour but it will add some extra crunch too. 

Spice it up

Mix in half a teaspoon each of ground cinnamon and nutmeg to really add some Christmassy flavour. 

Gingery warmth

Add some finely chopped stem ginger and a little of the syrup from the jar to give your  pastry that extra pop of taste.  

Get citrusy

Grate in the zest of two clementines along with some cocoa powder for a Christmassy chocolate orange zing.

Say cheese

For all cheese-lovers, why not add a little finely grated parmesan for an umami hit?
