Porridge is enjoying somewhat of a renaissance. It's fed the world for hundreds of years, and now the cheap, cheerful and hearty dish is one of the most Instagrammable recipes, often topped with a handful of berries and nuts, and even takes its place on brunch menus next to eggs Benedict and banana pancakes.
From easy overnight oats, porridge which actually tastes like carrot cake and a tasty chia pudding - here are three recipes even Goldilocks wouldn't be able to keep her hands off!
Who'd have thought that almond milk, poppy seeds, peanut butter and syrup stirred into a big bowl of oats could be so tasty? All you need to do the night before is mix all the ingredients together, cover and put in the fridge. If you've got a spare 2 minutes the following morning, chop up a kiwi, add some mango chunks and then gobble it down. You could even put your oats in an airtight jar to take to work with you, so you can have a slice of foodie heaven al desko.
Carrot cake porridge
Now this carrot cake porridge really is something to get up in the mornings for. It's got all the all the flavours of a proper carrot cake, but in a bowl of porridge - what's not to love? We've used rolled oats, stirred in some almond milk then seasoned it with cinnamon and nutmeg. It's been topped with some shredded carrot, raisins and chopped walnuts.
Although the name of this recipe might include the word 'pudding', it's a delicious, simple on-the-go breakfast that can be made the night before. Simply mix all the ingredients together (the oats, almond milk, yoghurt and chia seeds) then place it in the fridge. The following morning serve it up topped with a hearty helping of fruit. We've opted for raspberries, blueberries and a drizzle of honey, but you could always include any other of your five a day which you have spare. Once you're finished it will be good enough to Instagram!
