Whether you choose to toss your potatoes in a creamy mayo dressing or drizzle over a tasty vinaigrette, a potato salad is a dish no barbecue or summer feast would be complete without.
"They have a firm and waxy texture and hold their shape perfectly"
We love nothing more than digging into some perfectly boiled potatoes which are coated in a zingy or herby dressing and served up alongside a plateful of perfectly chargrilled barbecued burgers, sausages and kebabs. And when it comes to choosing your spud, new potatoes work every time, according to food editor Gregor McMaster;
"New potatoes really work in potato salads because they have a firm and waxy texture and hold their shape perfectly,"
As Saturday, August 19 marks National Potato Day, we wanted to show you a few ways you can mix up your summer potato salad. So next time you get the barby out, make your potatoes shine!
1. classic potato salad
For classic potato salad fans, this recipe is a winner. Quick and easy to make in just under half an hour, this classic dish combines mayonnaise, soured cream, mustard and onion granules to give your tatties a bit of a tang. Then finished off with fresh spring onions and chives, this is classic potato salad perfection! If you're short on time why not pick up our Extra Special Potato Salad made with Charlotte potatoes and a double cream, soured cream and chive dressing.
2. New potato salad with honey
Transform your classic potato salad with this gorgeous recipe which combines sweet honey and sour cider vinegar which balance out perfectly. Top your salad with a sprinkle of chopped chives and red onion to give it a touch of colour and burst of flavour and hey presto!
3. vinaigrette potato salad
Simple, fast, sweet and slightly spicy, this is the perfect potato salad for those who prefer a vinaigrette rather than a creamy mayo dressing. And with just two method steps, it will be on the table within minutes.
4. Steak & potato salad
Peppery radishes, horseradish and mustard add a touch of heat to this punchy potato salad. Cook your steak on the BBQ then place it on top of the potato salad and let the meaty juices drip onto the salad beneath.
5. Chimichurri potato salad
This South American-style chilli and herb dressing adds colour and spice to this simple dish. The chilli, garlic, vinegar and lime juice will cut through the flavours of any kind of red BBQ meat so we'd recommend serving it with steak, burgers or lamb chops.
6. Sticky sausage & potato salad
This substantial summer salad is delicious warm but just as nice chilled. If you'll be doing the latter make sure you make ahead and refrigerate overnight to let the flavours really blend. It's also a great way of using up leftover sausages - serve for dinner with a simple green salad on the side.
