Last week we showed you four super refreshing meals perfect for warmer weather and now in the second instalment of our Simple Summer Suppers, we’re focusing on quick recipes that can be whipped up in no time. With summer in full swing, there’s so much fun to be had playing outside, sipping cooling cocktails, eating al fresco or just reading on the beach with friends and family. Which translates into less time available for spending in the kitchen. But there’s no need to forgo tasty, summer dishes - we’ve got six quick recipes that you can have on the table in minutes.

From a crunchy, veggie-packed Pad Thai salad to flaky fish with tons of flavour in just three minutes, these time-saving recipe ideas will really wow friends and family. Save these quick recipes now for when you have friends round and want to impress but are short on time, or would rather be socialising than cooking. Because you’ve got better things to do this summer!

Salmon Poke Bowl

Fancy something cold to eat but loaded with good-for-you ingredients? Create your own salmon poke bowl! On a bed of sushi rice, add cured fresh salmon with slices of avocado, radishes and cherry tomatoes and sprinkle on spring onions, black sesame seeds and crumbled nori seaweed. Top with wasabi mayonnaise and sriracha mayonnaise for a real flavour kick. You could even lay out the ingredients on the table and let everyone build their own bowls! 

Pad Thai veg ribbon salad

Ready in just 15 minutes, this crunchy Pad Thai salad recipe is packed full of vegetables and looks absolutely beautiful on the table. Sweet chilli sauce combined with soy sauce and lime juice adds plenty of flavour, while marinated tofu makes this salad super satisfying! 

Italian Summer Salad

Take a trip abroad with his gorgeous rainbow salad that’s perfect for feeding a crowd. In a large bowl, simply add prosciutto, sliced nectarine, buffalo mozzarella or mini mozzarella balls, artichokes and fresh mint. Then drizzle over some Balsamic Vinaigrette and tuck in! For a special touch, stone and quarter the nectarines before placing them on the grill. 

Fish Made Simple

Many people shy away from cooking fish (psst… here are some great tips for cooking fish to perfection) but when it’s hot out and you don’t have a lot of time, fish is an excellent supper choice. For a seriously impressive and fuss-free recipe, try this Sea Bass fillets with red pesto and broccoli, sugarsnap and spiralized veg recipe. With Asda's Sea Bass fillets with red pesto butter, you can enjoy perfectly cooked fish in just 12 minutes in the oven or 3 minutes in the microwave. Add a bag of pre-cut broccoli, sugarsnaps and spiralized veg and you can have a healthy, delicious dish on the table in no time. 

Mediterranean Fish 

Get a taste of the Med with Asda's quick and easy cod fillets that only need 7 minutes to cook from frozen in the pan or 20 minutes in the oven. While the fish is cooking, heat up Asda Good & Balanced Mediterranean Vegetables with Cherry Tomatoes which take the same amount of time to cook as the fish. Add a dollop of pesto and you're ready to go!

King Prawn Tagliatelle

Have 10 minutes? Then you have enough time to whip up an Italian feast! While the pasta is cooking, grab a packet of garlic and herb butter King Prawns from the freezer and quickly heat up in the pan with some chopped chilli and fresh parsley. Drain the pasta, add the prawns, add a squeeze of lemon and that's it - buon appetito!
