The month of Ramadan is set to start on the 23rd April this year, so we asked chef Joudie Kalla, author of Baladi: Palestine - A Celebration of Food From Land and Seato create a special supper club menu to enjoy with loved ones.

"Getting people together during Ramadan is so important and sharing food is a great way to do that," says Joudie.

"All of these recipes have been passed down by family or friends, so cooking their dishes is a great way to bring everyone to the table, even if they can't be there in person. Plus, these plates are brilliant for replenishing energy after a long day of fasting - and make a fantastic spread for a garden party, too."

Beetroot muttabal

"Sweet beetroot and tangy yogurt make a vibrant dip that's cool and refreshing," says Joudie.

If possible, try to make this sweet and creamy dip the day before to really let the colours develop.

Cauliflower fritters

These cauliflower fritters, a bit like a savoury scotch pancake, can be made ahead and then reheated in the oven for ultimate speediness when it comes to dinnertime.

Spiced chicken rice platter

Aromatic and filling, this chicken and rice dish is a real winner.

"Perfect for filling up after fasting, this delicious rice dish is packed with fragrant spice flavours," says Joudie.

Falafel salad

Flavourful falafel are wholesome and hearty, and are at their best when served warm, like in this salad with a creamy tahini dressing.

"These falafel are a delicious veggie source of protein," says Joudie.

Lamb and green bean stew

Originating from the north of Palestine, this slow-cooked stew can be made the day or night before to allow the flavours to develop and deepen - perfect to have in the fridge ready to eat after a day of fasting!

Green eggs

This delicious, lightly spiced egg dish gets its glorious colour from fresh spinach.

Joudie says, "Mixed with fresh herbs and served with a lightly spiced fresh salsa, this is my favourite way to eat eggs."

Spinach and feta borek

"Crisp savoury filo pastries wih a filling of tangy feta and leafy spinach - irresistible!"

These delicious savoury pastries are sure to go down a treat. Leftovers can be reheated quickly in the oven until they're crisp and warm again. Who could say no?

Batata harra

Like a Middle Eastern take on potato hash, these herby, seasoned potatoes are filling and packed with flavour - the perfect side dish for your meal.

"These traditional spicy roast potatoes have a lovely fresh zing of lemon," says Joudie.


Fresh and tart with plenty of crunch, this fruity salad is simple to put together. It's also perfect for menus like this where everyone can help themselves to a little of what they want, thanks to its crunchy textures and brilliant colours.

Watermelon juice with mint

"This drink, with its gorgeous hint of rose, is so hydrating. The juicy watermelon and cool mint make it really refreshing," says Joudie. "And, as it's blitzed, you don't really need to remove the seeds."
