Asian fusion rice noodle salad

For a veggie alternative to this flavoursome noodle salad, add ready-made tofu or a boiled egg in place of the chicken. Pack it up in a sealable jar if you're in need of lunch on-the-go.

Mix up the ingredients:

Base: Rice noodles, sticky rice, shredded cabbage, brown rice

Veg: Edamame beans, shaved carrot, spinach, cooked broccoli

Protein: Grilled chicken, marinated tofu, smoked salmon, boiled egg

Dressing: Sesame orange vinaigrette, soy hoisin dressing, chilli lime dressing

Mix up the ingredients:

Base: Giant cous cous, spiced rice, quinoa, cauliflower rice

Veg: Grilled aubergine, roast peppers, cooked sweet potato, roasted carrots

Protein: Roasted chickpeas, feta cheese, pine nuts, leftover roast lamb

Dressing: Tahini, lemon & olive vinaigrette, harissa yogurt
