When it comes to foodie trends, avocado, kale, quinoa and green juice have long been riding high. So it’s about time that we saw some new competition on the chopping block.

From smashed avocado and poached eggs, to peanut butter, blueberries, figs and salmon, here's how to enjoy your new favourite brekkie...

Enter sweet potato toast.

Here to transform breakfast time, sweet potato ‘toast’ has been slowly creeping into the mainstream, thanks to food bloggers and Instagram’s wealth of wellness stars all sharing their love for the gluten-free orange treat.

From #EatTheRainbow to #CleanEating, the breakfast dish has already earned itself cult status online, largely thanks to it’s brilliantly bright appearance which makes photographing and hashtagging it a food-porn dream.

But what about actually eating it, eh? Is it really any good? Well, that all depends on your toppings. But first thing’s first, let’s talk about how you actually make it.

A huge part of sweet potato toast’s appeal is the speed with which you can whip it up. Forget ramping up the oven, all you need here is the toaster.

Slice your spuds lengthways to create slices around 1cm thick (any thicker and they’ll be tricky to soften), then simply pop them in the toaster as you would bread.

Depending on the power of your appliance, you might need to toast the slices more than once to get them soft in the middle (most people agree that two pops is the magic number), but once you have - they're done!

Hey there guys, it's Kendra from @paleopaparazzi I hope you're having a fabulous weekend! Today I wanted to bring you a breakfast idea that doesn't involve eggs. It's also great for lunch too! . SIMPLE SALMON BITES . Ingredients: . 2-6 oz. Salmon fillets (preferably wild caught) 1 tbsp adobo seasoning (sub w/ another seasoning if you don't have) 1 tbsp ghee or coconut oil Salt & pepper to taste 2 large sweet potatoes/ potatoes made into "toasts" see prev. recipe Favorite toppings, I used sliced avocado & garlic aioli & tomatoes. . Rub equal amounts of seasoning on fillets & Salt and pepper to taste. . Melt the ghee/coconut oil in a skillet over med. heat. Add your fillets and cook for five minutes on each side, until browned & flakey. . Slather "toasts" with your favorite sauce, evenly distribute salmon on top of them and add your favorite toppings! .
