The ultimate Father’s Day afternoon tea

We all love afternoon tea, right? It's the perfect way to unwind and treat yourself to something special.

We're taking the classic afternoon treat to a whole new level with this ultimate Father's Day high tea. Packed with flavours your dad will love, from Guinness brownies to mini banoffee bites, these recipes are foolproof and super-quick to whip up – so get creative! THE ULTIMATE FISH FINGER SANDWICH

MAKES: 2 whole sandwiches or 8 mini triangles

YOU WILL NEED:

HOW TO:

1)   Preheat the oven to 220C/200C Fan/Gas 7. Cook the fish fingers for 14 mins.

2)   Spread tartare sauce over 2 slices of bread.

3)   Slice the lettuce and arrange on top of one of the pieces of bread. Add the cooked fish fingers and sandwich together. 

 

ALE AND CHILLI JAM SAUSAGE ROLLS

Makes: 8 mini rolls

YOU WILL NEED:

HOW TO:

 1)  Follow our foolproof sausage roll recipe here, but use the ingredients above for a special twist, and follow these variations to the method:

2)  After you've removed the sausage meat from the skins, add the allspice, ale and chilli jam and mix together.

3)  Pop in the fridge to set for 10 minutes (making it easier to create the log).

4)  When you've formed the sausage rolls and put on the baking tray, glaze with beaten egg and sprinkle with sesame seeds before baking.

 

 

Brownies with Guinness icing and crumbled Bourbons

MAKES: 12 small squares 

YOU WILL NEED:

 

HOW TO:

1) Preheat the oven to 180C/160C Fan/Gas 4.

2) Bake the brownies according to the pack instructions on the brownie mix, then leave to cool.

3) Mix 200g buttercream icing with the Guinness.

4) Spread the Guinness icing over the cooled brownie and crumble bourbon biscuits on top. For a variation, try piping the icing in a pattern.

 

 

mini Banoffee pies

MAKES: 9 mini pies

YOU WILL NEED:

 

HOW TO:

1)   Using the shortbread rounds as the base for the pies, first spread over some caramel, then add squirts of cream and finish with sliced banana.

2)   Grate milk chocolate over the banoffee pies to decorate.

 

 

 

Mini donuts with lemon zest drizzle 

MAKES: 18 mini donuts 

YOU WILL NEED:

HOW TO:

1)   Cut the mini donuts in half, spread the cut sides with the lemon curd, and sandwich the two halves together.

2)   Add 1 tbsp of cold water to 4 tbsp of icing sugar to form a thick drizzle and whisk together. Drizzle over the lemon curd-filled donuts.

3)   Top with a grating of lemon zest to serve.

 

Put them all together and you've got yourself the ultimate spread to celebrate Father's Day with your dads!
