Waste not, want it: love your leftover veg and peelings

Why not start the new year by reducing your vegetable waste? But if you're not sure where to start, don't worry, here's three easy hacks to get you started. 
 

ONE: MAKE A STOCK

Well-scrubbed root veg peelings are perfect for an easy-to-make freezable stock. Throw in any spare veggies that are past their best. You can use the stock for so many recipes, including this delicious Winter Chunky Vegetable Soup to warm you up.
 

TWO: FRY UP FRITTERS
