Ingredients
  • 15 large King Edward potatoes, peeled and halved
  • 440g of goose fat
Method
  • Preheat oven 210F 230C.

  • Place potatoes in a large pan and cover with cold water.

  • Bring to the boil and cook for 2 minutes.

  • Drain the potatoes in a colander and briefly shake them around to roughen up the edges.

  • Add the goose fat to a large hot roasting in, and pour in the potatoes and optional sprinkle with sea salt.

  • Roast for 30-40 minutes shaking halfway through.
