Kiwi & lime sorbet
- 500g (about 8) very ripe kiwi fruit peeled and roughly chopped
- 80g icing sugar
- uice 1 small lime
Put the kiwi fruit, icing sugar and lime juice in a blender or food processor and blitz to a rough purée.
Pour into a freezer-proof container and freeze for 1 hr or until slushy.
Remove from the freezer and whisk with a fork. Return to the freezer for another 45 mins before repeating the process. Continue freezing and whisking until the mixture is set.
Put the frozen mixture in the blender or processor again and blitz until smooth.
Return to the freezer for 45 mins before serving. If freezing for longer, you may need to remove the sorbet and let it stand for a while to soften a little before serving.
