Ingredients
  • 500g (about 8) very ripe kiwi fruit peeled and roughly chopped
  • 80g icing sugar
  • uice 1 small lime
Method
  • Put the kiwi fruit, icing sugar and lime juice in a blender or food processor and blitz to a rough purée.

  • Pour into a freezer-proof container and freeze for 1 hr or until slushy.

  • Remove from the freezer and whisk with a fork. Return to the freezer for another 45 mins before repeating the process. Continue freezing and whisking until the mixture is set.

  • Put the frozen mixture in the blender or processor again and blitz until smooth.

  • Return to the freezer for 45 mins before serving. If freezing for longer, you may need to remove the sorbet and let it stand for a while to soften a little before serving.
