Ingredients
  • 1tbsp rapeseed oil
  • 250g jumbo oats
  • 50g chia seeds
  • 50g pumpkin seeds
  • 50g flaked almonds
  • 50g desiccated coconut
  • 2tsp cinnamon
  • 2tbsp brown sugar
  • 50g raisins
  • 50g dried cranberries
  • 4 Bramley apples, peeled, cored and roughly chopped
  • 500g Frozen for Freshness Summer Fruits
  • 250ml apple juice
  • 2tbsp clear honey
Method
  • Preheat the oven to 160C/140C Fan/Gas 3. Line a baking tray with baking paper.

  • For the granola, put the oil, oats, chia seeds, pumpkin seeds, almonds, coconut, cinnamon and sugar on the tray and mix.

  • Bake for 25-30 mins until golden and crisp, tossing occasionally. Add the raisins and cranberries in the final 10 mins of cooking. Remove and cool completely.

  • To make the fruit purée put the apples, frozen fruit, apple juice and honey in a pan over a medium heat. Bring to a boil and simmer for 30 mins, stirring often, until the apples break down and the purée has thickened. Cool fully.

  • When ready to serve, layer a few spoonfuls of the granola and fruit purée in individual jars or glasses.
