Ingredients
  • 250g butter
  • 250g caster sugar
  • 5 eggs
  • 250g self raising flour
  • 2 English Russet apples, all cored, 1 thinly sliced, 1 peeled and diced
Method
  • Preheat the oven to 180c

  • Grease and line a 22cm square cake tin. Arrange the sliced apples in the bottom of the tin, in 3 lines.

  • Beat the butter and sugar until light and fluffy. Add the eggs 1 at a time then fold in the flour and diced apples.

  • Bake at 180c for 30 to 40 minutes.

  • Serve hot or cold with custard, ice cream or cream.
