Avocado-chickpea mashup in pitta
- 100g canned chickpeas
- tablespoon olive oil
- 1tsp ground cumin
- 1⁄4 avocado
- 2tsp lime juice
- 3 cherry ￼￼tomatoes, halved
Preheat your oven to 220C/200C Fan/Gas 7.
Toss chickpeas, rinsed and drained, in a little oil and ground cumin then roast until crispy.
Mash avocado with lime juice and put in a griddled pitta with the chickpeas, spinach leaves and cherry ￼￼tomatoes. Season with ground black pepper.
