Ingredients
  • 100g canned chickpeas
  • tablespoon olive oil
  • 1tsp ground cumin
  • 1⁄4 avocado
  • 2tsp lime juice
  • 3 cherry tomatoes, halved
Method
  • Preheat your oven to 220C/200C Fan/Gas 7.

  • Toss chickpeas, rinsed and drained, in a little oil and ground cumin then roast until crispy.

  • Mash avocado with lime juice and put in a griddled pitta with the chickpeas, spinach leaves and cherry tomatoes. Season with ground black pepper.
