Baby veg with marmalade glaze
- 175g pack baby leeks
- 175g baby Chantenay carrots
- 175g baby parsnips
- 2tsp rapeseed oil
- 3tbsp orange marmalade
- A few thyme leaves, to garnish
Preheat the oven to 220C/200C Fan/Gas 7.
Put all the veg and the oil in a roasting tin and toss to coat. Cook in the oven for 15 mins, then gently move them around so the ones at the edges go to the middle. Return to the oven for another 10 mins until just tender and a little browned at the edges.
Add the marmalade to the tin and toss to coat the veg. Roast for 5-10 mins, then serve immediately.
