Bacon and smashed avocado bagel with an egg baked into the top

  • 240g pack Extra Special 8 Rashers Unsmoked Dry Cured Back Bacon
  • 4 sesame seed bagels, split
  • 4 medium free-range eggs
  • 1 large avocado
  • 1 tbsp chopped coriander
  • 1tbsp lemon juice
  • Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper.

  • Arrange the bacon on the lined ray so it's evenly spaced. Cook in the oven for 12-15 mins, until crisp and browned at the edges.

  • The bagel-top holes should be about 3cm across; trim to widen, if necessary. Put the bagel halves cut-side down on a separate baking tray lined with foil. Crack 1 egg into each top hole. Bake for 7-10 mins until the egg is just set and the bagels are toasted.

  • Meanwhile, mash the avocado with the coriander and lemon juice. Season with black pepper.

  • Spread the avocado on the bottom halves of the bagels and top each with 2 bacon rashers. Sandwich with the tops and sprinkle with pepper to serve.
