Ingredients
  • 300g orzo apsta
  • 300g frozen broad beans
  • 1 leek, thinly sliced
  • 3 rashers Butcher's Selection Smoked Streaky Bacon, chopped
  • 1tsp rapeseed oil
  • 1 lemon, zested and sliced
  • 40g Parmesan, grated
  • 10g basil, leaves torn
Method
  • Bring a large pan of water to the boil. Add the orzo and cook for 5 mins.

  • Add the beans, bring back to the boil and cook for 2 mins. Add the leek. Cook for 2 mins. Drain, reserving 100ml of the cooking water.

  • Meanwhile, fry the bacon in the oil, on a medium heat, for 5-7 mins until crisp.

  • Reduce the heat. Add the pasta and veg to the frying pan, along with the lemon zest and half the Parmesan.

  • Stir through the reserved cooking water. Cook for 1-2 mins until thickened.

  • Divide between 4 plates. Sprinkle with the remaining Parmesan, the basil leaves and black pepper. Serve with the lemon slices.
