Ingredients
  • 1tsp rapeseed oil
  • 1 small leek, sliced
  • 1 small courgette, sliced
  • 1tbsp reduced-fat pesto
  • 1 lemon, ½ juiced and ½ sliced
  • 1 rasher smoked streaky bacon
  • 260g pack Extra Special Cod Loin
Method
  • Preheat the oven to 200C/180C Fan/Gas 6. Lay a large sheet of foil on a baking tray and brush with the rapeseed oil.

  • In a bowl, toss the leek and courgette with the pesto and lemon juice. Season with black pepper and heap in the centre of the foil. Arrange the lemon slices on top.

  • Wrap the bacon around the cod fillet. Set the fish on top of the lemon slices, with the bacon seam underneath.

  • Fold up the sides of the foil and crimp to seal into a parcel. Bake for 20 mins, until the fish is tender and flaky and the vegetables are cooked. Transfer to a plate and season with black pepper to serve.
