  • 125g flour
  • 1tsp baking powder
  • 50g golden caster sugar
  • 1 egg, lightly beaten
  • 100ml milk
  • 3 bananas, sliced
  • 2tsp sunflower oil
  • 1/2 tsp icing sugar
  • 1/2 tsp cinnamon
  • Sift the flour and baking powder into a bowl and stir in the caster sugar. Make a well in the middle and add the egg.

  • Gradually beat in the milk until you have a thick, smooth batter. Dip the bananas in the batter to coat.

  • Heat half the oil in a frying pan and fry the fritters in batches, for 2-3 mins on each side, adding more oil if needed. Lay on kitchen paper.

  • Transfer to a serving plate and dust with the icing sugar and cinnamon.
