- 100ml olive oil
- 3 potatoes, peeled and diced
- 1 large sweet potato, peeled and diced
- 1tsp cayenne pepper
- 5 cloves garlic, crushed
- 1 red chilli, chopped, plus extra, sliced, to serve (optional)
- Juice 2-3 lemons
- 25g fresh coriander, chopped
Preheat the oven to 200C/180C Fan/Gas 6.
Put the oil in a roasting tin; heat in the oven for 10 mins.
Add the potatoes, sweet potatoes, cayenne, garlic and chilli and toss to coat in the oil. Roast for 40-50 mins, tossing occasionally, until the potatoes are crisp and golden.
Stir through the lemon juice, coriander and the optional chilli to serve.
