Ingredients
  • 100ml olive oil
  • 3 potatoes, peeled and diced
  • 1 large sweet potato, peeled and diced
  • 1tsp cayenne pepper
  • 5 cloves garlic, crushed
  • 1 red chilli, chopped, plus extra, sliced, to serve (optional)
  • Juice 2-3 lemons
  • 25g fresh coriander, chopped
Method
  • Preheat the oven to 200C/180C Fan/Gas 6.

  • Put the oil in a roasting tin; heat in the oven for 10 mins.

  • Add the potatoes, sweet potatoes, cayenne, garlic and chilli and toss to coat in the oil. Roast for 40-50 mins, tossing occasionally, until the potatoes are crisp and golden.

  • Stir through the lemon juice, coriander and the optional chilli to serve.
