Beef koftas with giant couscous fusion tortillas
- 1 red onion
- 2 cloves garlic
- 750g Butcher's Selection Lean Beef Mince
- 2 tbsp ground coriander
- 40g mint
- 1 red chilli
- 1 egg
- 2 x 200g Asda Steam Bags Giant Couscous & Quinoa
- 1 tbsp basil pesto
- 1 tomato
- 1/4 cucumber
- seeds from 1 pomegranate
- 20g parsley
- 20g chives
- 2 tbsp fat free natural yoghurt
- zest 1 lemon
- 6 wholemeal tortillas
Soak 12 wooden skewers in water. Preheat the oven to 200C/180C Fan/Gas 6.
Mix 1 red onion, grated, 2 cloves garlic, crushed, 750g Butcher’s Selection Lean Beef Mince, 2tbsp ground coriander, 40g mint, chopped, 1 red chilli, deseeded and chopped, and 1 egg, beaten.
Dampen your hands with water, and form the mixture into 12 ‘sausages’ around the skewers. Bake on a tray for 10-15 mins, turning every 5 mins until cooked through.
Cook 2 x 200g Asda Steam Bags Giant Couscous & Quinoa according to the pack instructions. Mix in 1tbsp basil pesto, 1 tomato, diced, ¼ cucumber, diced, seeds 1 pomegranate, 20g parsley, chopped and 20g chives, snipped.
Mix together 2tbsp fat free natural yogurt and the zest 1 lemon. Season with black pepper.
Dry-fry 6 wholemeal tortillas until lightly toasted. Top each one with couscous, 2 koftas, a drizzle of yogurt and torn mint leaves. Serve.
