Beetroot chocolate mousse
- 2 Grower’s Selection Bunched Beetroots, washed and stalks removed
- 200g white chocolate
- 300ml Asda Fresh Whipping Cream
- 1tsp vanilla extract
- White chocolate curls
Preheat the oven to 200C/180C Fan/Gas 6.
Wrap the beetroots in foil and roast for 45-55 mins until tender.
Unwrap, allow to cool a little, then peel with your hands. Chop, then blend until smooth. Leave to cool.
Melt the white chocolate in a glass bowl over, but not touching, a pan of simmering water. Set aside and cool slightly.
Whisk the cream and vanilla until thickened. Use a metal spoon to fold in the chocolate, followed by the beetroot purée.
Spoon into 10 glasses, cover with clingfilm and chill in the fridge for 2 hrs.
Top with the chocolate curls and serve.
