Beetroot & feta cheese salad
- 40g sunflower seeds
- 2 tbsp olive oil
- 1 tbsp cider vinegar
- 1 tsp Asda Clear Honey
- ½ tsp Asda Coarse Grain Mustard
- 300g pack Asda Long Life Cooked Beetroot
- 2 eating apples
- 3 sticks celery, thinly sliced
- 125g Asda Feta Cheese
- French stick (or crusty bread), to serve
Toss the sunflower seeds in a dry frying pan over a medium heat for 3-4 minutes or until lightly toasted. Tip into a bowl and set aside. Make a dressing by putting the olive oil, vinegar, honey and mustard in a jar or sealed plastic container. Season with pepper and shake well.
Peel the beetroot and cut into thin wedges. Core the apples and slice thinly, leaving the skin on. In a bowl, mix the beetroot together with the apples, celery and dressing.
Break the feta into small pieces with your hands. Add to the beetroot mixture and stir in gently. Sprinkle the sunflower seeds over the salad and serve with bread.
