Beetroot and goat’s cheese galette with wild rocket
- 400g Asda Ready Rolled Pizza Dough
- 150g Grower’s Selection Cooked Beetroot, drained and quartered
- ½ red onion, thinly sliced
- 75g Asda Goat’s Cheese
- 10g pine nuts
- 1tsp extra virgin olive oil
- 20g wild rocket
Preheat the oven to 200C/180C Fan/Gas 6.
Unroll the pizza dough onto a large baking tray.
Layer the beetroot and onion in the centre of the dough and crumble over the goat’s cheese. Sprinkle with the pine nuts, season with ground black pepper and drizzle with the oil.
Fold up the corners and edges of the dough to slightly cover some of the filling and make a round shape.
Bake for 25-30 mins, or until the dough is golden. Cool for 5 mins, then sprinkle over the rocket and slice to serve.
