Bengal king prawn curry
- 1tbsp rapeseed oil
- 2 red onions, sliced
- 25g pack coriander, stalks and leaves separated and roughly chopped
- 1tbsp mild curry paste
- 2tbsp desiccated coconut
- 160g Asda Cooked & Peeled King Prawns
Heat the oil in a large frying pan. Add the onions and coriander stalks and fry over a medium heat for 5 mins until golden. Add the curry paste and fry for 1 min more.
Add 100ml boiling water to the pan and stir to combine. Simmer for 10 mins until thickened. Stir through the desiccated coconut and remove from the heat.
Stir through the king prawns, sprinkle with the coriander leaves and serve immediately.
