Ingredients
  • 2kg Gammon Joint
  • 1 leek, trimmed and sliced
  • 2 sticks celery, chopped
  • 3 bay leaves
  • 6 peppercorns
  • 500ml Asda Apple & Blackberry Juice Drink
  • 2tbsp blackcurrant jam
  • 1tbsp rum
Method
  • Put the gammon, vegetables, bay leaves, peppercorns and fruit juice drink in a large pan.

  • Cover with water, put the lid on and bring to a boil, then simmer for 30 mins per 450g of gammon.

  • During cooking, top up the water and skim the surface if necessary.

  • Preheat the oven to 190C/170C Fan/ Gas 5. Drain the gammon, discarding the liquid and veg and cool slightly.

  • Using a sharp knife, gently cut the ride away from the joint, leaving an even layer of fat around the meat.

  • Put the jam and rum in a small pan and warm gently, stirring together. Brush all over the gammon joint.

  • Put the gammon on a baking tray lined with foil, then roast in the over for 20-30 mins until the glaze is set and bubbling. Allow to rest for 10 mins before carving. Eat hot or cold.
