Ingredients
  • 10 slices Extra Special Dry Cured Pancetta, chopped
  • 180g Merchant Gourmet Whole Chestnuts, chopped
  • 500g trimmed Brussels sprouts, halved
  • 3tbsp chopped parsley
  • Zest and juice ½ lemon
Method
  • Cook the pancetta in a large frying pan for 5-6 mins until just crisping up.

  • Add the chestnuts and Brussels sprouts. Stir-fry for 5 mins until just cooked through.

  • Sprinkle with the chopped parsley, and season with freshly ground black pepper.

  • Sprinkle over the lemon zest and juice and serve immediately.

  • TOP TIP: To avoid overcooking Brussels sprouts, cut any large ones in half, then cook them at the last minute.
