Ingredients
  • 1 tbsp sunflower oil
  • 4 pork sausages
  • 4 rashers back bacon
  • 8 mushrooms, halved
  • 2 tomatoes, halved
  • 2 free-range eggs
  • Baked beans, to serve
  • Crusty bread, to serve
Method
  • Heat the oil in a large, non-stick frying pan and cook the sausages until lightly browned. Add the bacon and mushrooms and continue cooking until the bacon is almost cooked.

  • Add the tomatoes and cook until they start to soften on the outside. Move everything to the edge of the pan and break in the eggs. Cook for 2-5 minutes until the white is set and the yolks cooked to your liking.

  • Serve with baked beans, heated in a separate pan, and crusty bread.
