Black Forest baked Alaska
- 2 large egg whites
- 100g caster sugar
- 4 slices Asda Madeira Cake (about 2cm thick)
- 4tbsp Extra Special Cherry Conserve
- 4 scoops Extra Special Chocolate Ice Cream
Preheat the oven to 220C/200C Fan/Gas 7. Line a baking tray with baking paper.
Whisk the egg whites until stiff, add the sugar a spoonful at a time, whisking each time, until glossy and forming peaks.
Put the slices of madeira cake on the baking paper, leaving a generous gap around each slice. Spread a spoonful of cherry conserve over each piece and top with a scoop of chocolate ice cream.
Spoon or pipe over the meringue, ensuing you cover all the ice cream and go right down to the base of the sponge.
Put in the preheated oven for 5 mins or until the meringue is just starting to colour, then serve immediately.
