Ingredients
  • 2 large egg whites
  • 100g caster sugar
  • 4 slices Asda Madeira Cake (about 2cm thick)
  • 4tbsp Extra Special Cherry Conserve
  • 4 scoops Extra Special Chocolate Ice Cream
Method
  • Preheat the oven to 220C/200C Fan/Gas 7. Line a baking tray with baking paper.

  • Whisk the egg whites until stiff, add the sugar a spoonful at a time, whisking each time, until glossy and forming peaks.

  • Put the slices of madeira cake on the baking paper, leaving a generous gap around each slice. Spread a spoonful of cherry conserve over each piece and top with a scoop of chocolate ice cream.

  • Spoon or pipe over the meringue, ensuing you cover all the ice cream and go right down to the base of the sponge.

  • Put in the preheated oven for 5 mins or until the meringue is just starting to colour, then serve immediately.
