Blackberry and Gin Jelly
- 450g blackberries
- 50g caster sugar
- 6tbsp fresh lemon juice
- 135g pack of Hartley’s Lemon Jelly
- 100ml sloe gin
Add the blackberries, sugar and lemon juice to a pan along with 300ml water and bring to the boil, simmering for 15 minutes.
Meanwhile break the jelly up into a large bowl and set aside.
Once simmered, line a sieve with a clean piece of muslin or non-absorbent cloth (such as J-cloth). Place over a large bowl and carefully pour the mixture through the sieve. Discard the pulp. Pour over the jelly and stir until all the jelly has dissolved.
Add the sloe gin and stir well.
Let cool slightly then transfer to a one pint jelly mould or bowl. Place a plate over the mould and put in the fridge overnight.
