Ingredients
  • 450g blackberries
  • 50g caster sugar
  • 6tbsp fresh lemon juice
  • 135g pack of Hartley’s Lemon Jelly
  • 100ml sloe gin
Method
  • Add the blackberries, sugar and lemon juice to a pan along with 300ml water and bring to the boil, simmering for 15 minutes.

  • Meanwhile, break the jelly up into a large bowl and set aside.

  • Once simmered, line a sieve with a clean piece of muslin or non-absorbent cloth (such as J-cloth). Place over a large bowl and carefully pour the mixture through the sieve. Discard the pulp.

  • Pour over the jelly and stir until all the jelly has dissolved.

  • Add the sloe gin and stir well.

  • Let cool slightly then transfer to a one pint jelly mould or bowl. Place a plate over the mould and put in the fridge overnight.
