Broccoli, beef and noodle stir fry
- 250g pack Extra Special Purple Sprouting Broccoli
- 250g pack Asda Oodles of Egg Noodles
- 1tsp sesame oil
- 3tsp rapeseed oil
- 350g pack Butcher's Selection Beef Stir Fry
- 3 spring onions, sliced
- 1 red chilli, sliced
- 1cm ginger, peeled and grated
- 1 clove garlic, crushed
- 2tbsp reduced-salt soy sauce
- 2tbsp oyster sauce
Cut the broccoli into short lengths. Cook in a pan of boiling water for 2 mins. Remove with a slotted spoon and drain on kitchen roll.
Add the noodles to the water and simmer for 4 mins. Drain and toss with the sesame oil. Set aside.
Heat 1tsp rapeseed oil in a wok or large frying pan, add the beef and cook, stirring, on a high heat, for 4 mins. Transfer to a bowl.
Heat the rest of the oil in the same frying pan. Add the broccoli, spring onions, chilli, ginger and garlic, then stir-fry for 4 mins.
Add the beef and its juices, the noodles, the soy sauce and the oyster sauce then heat through. Divide the stir-fry between 4 bowls. Serve immediately.
