Brussels sprouts with pancetta
- 160g cubed pancetta
- 500g trimmed Brussels sprouts, halved
- Juice ½ lemon
- Thyme sprigs, to serve
In a large frying pan, cook the pancetta for 5-6 mins on a medium heat until it
is just starting to crisp up
Add the sprouts and stir-fry for 5 mins until just cooked through. If you prefer them slightly more cooked, add a splash of water, then cover and steam for 2 mins.
Sprinkle with the lemon juice, thyme and black pepper. Serve immediately.
