The Jersey Royal was discovered by accident – one very happy accident. These kidney-shaped new potatoes have a magnificently nutty, buttery flavour and only need the simplest additions to make a great side dish. A source of vitamin C, they’re super-quick and easy to prep – no peeling required – and can be roasted, fried or mashed, but when boiled, they’re true potato royalty. They’re only around for a limited time, so don’t miss out!

Ingredients
  • 500g Jersey Royals
  • 50g butter
  • 2tsp lemon zest
  • 1tbsp chopped fresh herbs
Method
  • Put 500g Jersey Royals in a pan and cover with cold water. Bring to the boil, then simmer for 10-12 mins until tender.

  • Drain and toss with 50g butter, 2tsp lemon zest and 1tbsp chopped fresh herbs.

  • Serve sprinkled with freshly ground black pepper.
