Ingredients
  • 175ml buttermilk
  • 125g flour
  • 1 tsp light soy sauce
  • 100g dried breadcrumbs
  • 2 tbsp olive oil
  • Pinch cayenne pepper
  • 1 large onion, sliced into thick rings
Method
  • Pre-heat the oven to 200C/180C Fan/Gas 6. Line 2 baking sheets with baking paper.

  • Beat together the buttermilk, flour and soy to make a thick batter.

  • Put the breadcrumbs in a bowl and mix in the oil, cayenne and a pinch of salt.

  • Dip the onion rings in the batter, then in breadcrumbs to coat. Put on the trays and bake for 15-20 minutes.
