Ingredients
  • 175g butter
  • 100g caster sugar
  • 1 large egg yolk
  • Few drops of vanilla extract
  • 250g plain flour
Method
  • Pre-heat the oven to 180C/160C Fan/Gas 4. Line 2 baking trays with baking paper.

  • Mix the butter with the caster sugar until blended. Add the egg yolk and a few drops of vanilla extract. Stir in the plain flour until the mixture comes together.

  • Finish mixing with your hands to make dough. Shape into a shallow block and wrap in cling film. Chill for 20-25 minutes.

  • Roll out on a lightly floured surface to about 4mm thick. Cut into 2.5 x 8cm fingers.

  • Transfer to the baking trays and bake for 10-14 minutes until light golden brown.

  • Leave on the trays for 5 minutes to harden.

  • Transfer to a wire rack to cool.
