Ingredients
  • 2 onions, diced
  • 1 garlic clove, chopped
  • 2 tbsp olive oil
  • 2 oranges
  • 450g chopped carrots
  • 1 potato, chopped
  • 1 litre vegetable stock
  • 50ml half fat crème fraîche
Method
  • Gently cook onions and garlic in olive oil in a covered pan for 10 minutes.

  • Add the orange zest, juice, carrots, potato, and vegetable stock. Cover, bring to the boil and simmer until tender.

  • Cool, then blend with crème fraîche. Serve with a swirl of crème fraîche.
