Chargrilled flatbread bites with peas

- 400g Frozen For Freshness British Garden Peas
- Juice and zest 1 lemon
- 3tbsp torn fresh mint leaves, plus a few small whole leaves, to garnish
- 2tsp rapeseed oil
- 1 red chilli, deseeded and finely chopped
- 2 x packs Asda Garlic & Herb Flatbread
- 1tsp sumac
Bring a pan of water to the boil.
Add the peas and cook for 6 mins until well cooked and bright green. Drain, then return to the pan with the lemon juice and zest, torn mint leaves, oil and chilli and roughly mash with the back of a fork.
Heat a griddle pan on high and cook the flatbreads for 2 mins on each side until golden with griddle lines.
Slice the flatbreads into wedges, top with the crushed peas, sprinkle with the mint sprigs and sumac, then serve.
