Cheat’s ginger ale
- 120g fresh root ginger with skin on
- 2 lemons
- 100g soft brown sugar
- 500ml soda water
- mint (to serve)
Coarsely grate 120g fresh root ginger (skin on) and mix with 1 whole lemon (skin on), chopped, and the juice of another lemon. Whizz in a processor until pulpy.
Add 100g soft brown sugar and 250ml soda water. Leave for 10 mins to infuse.
Sieve, pressing out the juice. To serve, add ice, more soda water, mint and lemon slices.
