Cheese and vegetable gnocchi bake
- 1tsp rapeseed oil
- 2 x 180g packs Asda Mild British Baby Spinach
- 500g pack Asda Italian Gnocchi
- 100g Asda Ricotta
- 350g tub Asda Italian Tomato & Basil Sauce
- 100g cherry tomatoes
- 50g Asda 30% Less Fat Mature British Cheese, grated
- Rocket, to serve
Preheat the grill. Boil a kettleful of water.
Heat the oil in a large frying pan, add the spinach and cook, stirring, for 2-3 mins. Tip into a sieve over a bowl and use the back of a spoon to squeeze out as much liquid as possible.
Put the boiled water in the pan, add the gnocchi, bring back to the boil, then simmer for 2 mins. Drain the gnocchi and set aside.
To the same pan, add the ricotta and the sauce. Heat through but don’t let it boil.
Take off the heat. Stir in the gnocchi and spinach.Pour into a heatproof dish and put the tomatoes on top. Sprinkle on the cheese.
Grill until the cheese is melted and turning golden. Serve with the rocket.
