Ingredients
  • 1 clove of garlic, halved
  • 300g Emmental cheese, grated
  • 300g Gruyere cheese, grated
  • 300ml dry white wine
  • 1 liqueur glass of Kirsch
  • 2 tsp cornflour
  • Bread, for dipping
Method
  • Rub the base and sides of a heavy based pan with the cut halves of garlic, leaving the halves in the pan, when finished rubbing.

  • Add the wine and cheeses and bring to a simmer, stirring regularly. Meanwhile, mix the Kirsch with the cornflour to form a paste and add to the simmering cheese. Stir for a couple more minutes and turn off the heat. Season with pepper to taste and serve immediately with chunks of bread and skewers to dip.
